Chocolate means love to me. It takes dedication, skill and passion to turn this ancient ingredient into something that can melt your heart. This is what Kokoro stands for: chocolate that comes from the heart and soul.
I started my training in pastry in Vancouver, Canada and quickly fell in love with chocolate. This love affair brought me to Europe where I completed a stage with Pierre Hermé in Paris and then went on to apprentice with The Chocolate Line in Bruges, Belgium which is the epicenter of chocolate.
My chocolate journey has taken me from 100 year old recipes to contemporary 3 star Michelin chocolates. Kokoro Chocolate is made from the finest chocolate France and Belgium have to offer together with specialty ingredients that reflect what I love in food. These flavours hold a special place in my heart and I hope they will leave a lasting impression on you as well.
